A refreshing winter fruit salad with a vibrant mix of oranges, strawberries, kiwis, blueberries, and pomegranate, dressed in a zesty orange poppy seed dressing.

Ingredients

45 medium-sized oranges, peeled and chopped

1½ cups strawberries, cut in half

4 kiwis, peeled and quartered

1 cup blueberries

¾ cup pomegranate seeds

¼ cup fresh orange juice

1½ tsp honey

½ tsp poppy seeds

Instructions

  1. Peel and chop the oranges into bite-sized pieces. Slice the strawberries in half, peel and quarter the kiwis, and measure out the blueberries and pomegranate seeds. Combine all the fruit in a large mixing bowl.
  2. In a small bowl, whisk together the fresh orange juice, honey, and poppy seeds. Stir until the honey is fully dissolved and the dressing is well combined.
  3. Pour the dressing over the fruit and gently toss to coat all the ingredients with the orange poppy seed dressing.
  4. Serve the salad immediately, or chill in the refrigerator for about 15-20 minutes to let the flavors meld together before serving.

Notes

Storage: Best enjoyed fresh, but can be stored in an airtight container in the fridge for up to 2 days. The fruit may release juice over time.

For added crunch, try adding chopped nuts like almonds, walnuts, or pecans.

For a refreshing note, add fresh mint.

If you prefer a different sweetener, substitute honey with maple syrup or agave nectar.

If you need to prepare the salad ahead of time, store the dressing separately and add it just before serving to avoid fruit softening.
