A refreshing watermelon salad with juicy blueberries, tangy feta, fresh basil, and a zesty lime dressing, perfect for summer gatherings or a healthy snack.

Ingredients

5 cups watermelon, cubed (about 1 large mini seedless watermelon)

1 cup blueberries

¾ cup feta cheese, crumbled (or more to taste)

¼ cup fresh basil, thinly sliced (or more to taste)

2 Tbsp fresh lime juice

1 Tbsp honey

1 Tbsp olive oil

Salt, to taste

Black pepper, to taste

Instructions

  1. Cut the watermelon into cubes and place them in a large mixing bowl.
  2. Add the fresh blueberries to the bowl with the watermelon.
  3. Crumble the feta cheese and thinly slice the fresh basil. Add both to the bowl with the fruit.
  4. In a small bowl, whisk together the fresh lime juice, honey, olive oil, salt, and black pepper until well combined.
  5. Drizzle the dressing over the watermelon mixture and gently toss to combine, making sure everything is evenly coated.
  6. Serve immediately, or chill the salad in the fridge for 10-15 minutes to allow the flavors to meld before serving.

Notes

Storage: Best enjoyed fresh, but leftovers can be stored in an airtight container in the fridge for up to 2 days. The watermelon may release juice as it sits.

For extra freshness, try adding mint along with the basil.

If you like heat, try adding chili flakes or finely diced jalapeño to the salad for a spicy kick.

Feel free to swap the feta for goat cheese for a creamier texture.

If you’re looking for a different sweetener, maple syrup or agave nectar can replace honey.

This salad is naturally gluten-free and can be made dairy-free by omitting feta or using a non-dairy cheese alternative.
