8 cups seedless watermelon (about ½ of a medium-sized watermelon)
8 ounces feta cheese
1 pint fresh blueberries
1 teaspoon kosher salt
½ cup olive oil
3 tablespoons red wine vinegar
5 fresh basil leaves
Cut the watermelon into bite-sized cubes, removing rind and seeds if necessary.
Cube or crumble the feta cheese to your texture preference.
In a large bowl, combine watermelon cubes, blueberries, and feta.
In a separate bowl, whisk together olive oil, red wine vinegar, and kosher salt to make the dressing.
