This Vegan Peanut Butter Mousse with Chocolate Ganache is a rich and indulgent dessert featuring smooth peanut butter mousse topped with velvety dark chocolate ganache. It’s a perfect balance of creamy, nutty, and chocolatey goodness, entirely plant-based and easy to make.

Ingredients

350 grams silken tofu

34 tbsp smooth peanut butter (to taste)

34 tbsp agave syrup (or maple syrup or powdered sugar to sweeten, to taste)

1 tsp vanilla paste or extract

1 pinch salt

For the Chocolate Ganache:

100 grams 70% dark chocolate chips (or chopped dark chocolate)

400g tin full-fat coconut milk (only the creamy part at the top, refrigerate the can for an hour before scooping out the solidified cream)

Instructions

  1. Blend the silken tofu in a food processor or blender until smooth and creamy.
  2. Add peanut butter, agave syrup, vanilla extract, and salt to the tofu. Blend again until fully combined. Taste and adjust sweetness if desired.
  3. Transfer the mousse into serving cups or bowls and refrigerate for 1-2 hours to firm up.
  4. For the ganache, heat the coconut milk in a saucepan until it begins to simmer. Remove from heat, add dark chocolate, and stir until smooth. Let it cool slightly.
  5. Once the mousse has set, pour the slightly cooled ganache over the top. Drizzle lightly or pour generously for a more decadent effect.
  6. Garnish with chopped peanuts, cacao nibs, or sea salt if desired.
  7. Serve immediately or refrigerate for a firmer texture. Enjoy!

Notes

Adjust the sweetness by using different sweeteners like powdered sugar, maple syrup, or agave syrup. Each will give a slightly different flavor.

Be sure to use silken tofu for the smoothest texture. Firm tofu will not provide the desired consistency.

For a rich ganache, use full-fat coconut milk. Refrigerate the can for easy scooping of the solidified cream.
