Ingredients

For the Corn

  • 3 ears of corn (longer ones preferred), husks removed and ends trimmed
  • 3 tbsp olive oil
  • 1 tsp sweet paprika powder (or smoky paprika if preferred)
  • 1 tsp garlic powder
  • Salt & pepper to taste

For the Aleppo Chili Butter

  • 3 tbsp vegan butter
  • 1 tbsp olive oil
  • 1 ½ tbsp Aleppo chili flakes (or substitute with mild chili flakes)
  • Salt to taste (if using unsalted butter)

For the Lime Zest Cream Cheese

  • 125 g vegan cream cheese
  • Zest of 1 lime
  • ½ lime juiced

Other Ingredients

  • 2 tbsp toasted pine nuts
  • 1 green onion, finely chopped
  • 1 tbsp finely chopped coriander or parsley
  • Some lime zest for garnish (optional)

Instructions

  1. Prepare the Corn Ribs: Preheat your oven to 200°C (400°F). Cut each ear of corn into quarters lengthwise to create ‘ribs’. In a bowl, mix olive oil, sweet paprika powder, garlic powder, salt, and pepper. Brush this mixture evenly over the corn ribs.
  2. Bake the Corn: Place the corn ribs on a lined baking tray, ensuring they’re spread out evenly. Bake in the preheated oven for about 25-30 minutes until tender and slightly browned around the edges, turning them halfway through for even cooking.
  3. Make Aleppo Chili Butter: In a small saucepan, melt the vegan butter along with olive oil over low heat. Stir in Aleppo chili flakes and add salt if necessary. Keep the mixture warm on very low heat or off heat until ready to use.
  4. Prepare Lime Zest Cream Cheese: In a small bowl, combine vegan cream cheese, lime zest, and lime juice. Mix well until smooth and creamy. Set aside in the fridge if not using immediately.
  5. Assemble and Serve: Once corn ribs are baked, plate them and generously brush with Aleppo chili butter. Sprinkle toasted pine nuts, chopped green onion, and coriander or parsley over the top. Serve alongside dollops of lime zest cream cheese and garnish with extra lime zest if desired.

Notes

  • You can substitute Aleppo chili flakes with other mild chili flakes, but Aleppo provides a unique sweet and mildly spicy flavor.
  • If you don’t have vegan cream cheese, you can use a well-blended silken tofu with lime zest and juice as an alternative.
