A refreshing fruit salad with strawberries, blueberries, and grapes tossed in a delicate orange-vanilla glaze. Light, fragrant, and perfect for brunch, potlucks, or as a healthy dessert.

Ingredients

1 cup sugar

1 cup water

Juice and zest of 1 orange

2 tsp vanilla extract

4 pints strawberries, hulled and halved

2 pints blueberries

2 cups red grapes, halved

2 cups green grapes, halved

Mint leaves, for garnish (optional)

Instructions

  1. In a small saucepan, combine sugar, water, orange juice, and orange zest. Bring to a boil over medium heat.
  2. Reduce heat and simmer for 5–7 minutes until the mixture thickens into a light syrup.
  3. Remove from heat, stir in vanilla extract, and allow the glaze to cool completely.
  4. Wash, hull, and slice the fruit as needed.
  5. In a large bowl, combine strawberries, blueberries, red grapes, and green grapes.
  6. Pour the cooled glaze over the fruit and toss gently to coat.
  7. Chill for at least 30 minutes before serving. Garnish with mint leaves if desired.

Notes

Swap in seasonal fruits like kiwi, pineapple, or raspberries.

Use honey or maple syrup instead of sugar for a natural sweetener.

Add lemon juice for extra brightness.

Infuse glaze with a cinnamon stick for a warm flavor twist.

Top with toasted almonds or shredded coconut before serving.
