This Upside Down Apple Cake features caramelized apples in a cinnamon-sugar topping that becomes the bottom once flipped, paired with a moist, buttery cake. A perfect blend of sweet and tart apples, this cake is a delightful, aromatic dessert for any occasion.
For the Apple Topping:
4–5 apples, peeled and diced (about 3 cups, a mix of red and green apples for balance)
½ cup salted butter, melted
1½ tsp ground cinnamon
½ cup + 1 tbsp brown sugar
For the Cake:
½ cup canola or vegetable oil
½ cup butter, softened
1¼ cup granulated sugar
3 eggs
1 tsp vanilla
1¾ cups all-purpose flour
1 tbsp baking powder
½ tsp salt
¼ tsp baking soda
⅛ tsp ground nutmeg
Prepare the Apple Topping:
Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan or line with parchment paper.
Toss diced apples with melted butter, cinnamon, and brown sugar in a bowl until well-coated.
Spread the apple mixture evenly in the bottom of the prepared cake pan.
Make the Cake:
In a large bowl, beat canola oil, softened butter, and granulated sugar until light and fluffy.
Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
In a separate bowl, whisk together flour, baking powder, salt, baking soda, and ground nutmeg.
Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Pour the batter over the apples in the pan, spreading it evenly.
Bake the Cake:
Bake for 40-45 minutes or until a toothpick inserted comes out clean.
Let the cake cool for 5-10 minutes in the pan.
Flip the Cake:
Run a knife around the edges to loosen the cake.
Place a plate over the pan and carefully flip the cake to release it.
If any apples stick, gently scrape them off and place them back onto the cake.
