Ingredients

For the Steak:

2 rib-eye steaks, about 1 1/4 inch thick

1 tablespoon olive oil

4 sprigs fresh thyme, finely chopped

2 sprigs fresh rosemary, finely chopped

2 cloves garlic, minced or grated

2 fried eggs

Large handful fresh arugula

1 batch marinated cherry tomatoes (see below for the marinated tomatoes recipe)

For the Herb Oil:

2 tablespoons olive oil

Zest + juice of 1 lemon

2 teaspoons chopped fresh thyme

2 teaspoons chopped fresh oregano

1/2 teaspoon kosher salt and pepper

Instructions

  • Prepare the herb oil: In a small bowl, combine olive oil, lemon zest, lemon juice, fresh thyme, fresh oregano, kosher salt, and pepper. Mix well and set aside.

  • Prepare the steak: Rub the rib-eye steaks with olive oil. Sprinkle with chopped thyme, rosemary, minced garlic, and a pinch of salt and pepper. Let the steaks sit for 10-15 minutes to marinate slightly.

  • Cook the steak: Heat a grill pan or skillet over medium-high heat. Once hot, add the steaks and cook for about 4-5 minutes per side for medium-rare, or longer for different doneness. Remove the steaks from the pan and let them rest for a few minutes.

  • Prepare the fried eggs: In a separate skillet, heat a little oil or butter over medium heat. Crack the eggs into the pan and cook until the whites are set but the yolks remain runny (about 2-3 minutes). Cook longer for well-done eggs.

  • Assemble the dish: On a serving plate, place a bed of fresh arugula. Arrange the steak on top, drizzle with herb oil, and add a few spoonfuls of marinated cherry tomatoes. Top with the fried eggs.

  • Serve: Serve immediately, garnished with extra fresh herbs or a drizzle of herb oil if desired.

Notes

For a different cut of steak, sirloin, strip steak, or flank steak can be used.

Substitute arugula with spinach, kale, or mixed greens if preferred.
