For the salad:
2 lbs Yukon Gold or red potatoes, peeled and diced (about 4–5 medium potatoes)
1 cup mayonnaise (or Greek yogurt for a lighter version)
2 tbsp Dijon mustard
1 tbsp apple cider vinegar (or white vinegar)
Place the diced potatoes in a large pot and cover them with water. Bring to a boil over medium-high heat. Once boiling, reduce heat and simmer for 10-12 minutes until fork-tender.
Drain the potatoes and let them cool for a few minutes before transferring them to a large mixing bowl.
