Juicy, flavorful grilled chicken breasts marinated in a savory-sweet blend of Dijon mustard, honey, soy sauce, garlic, and spices, then perfectly charred for a smoky finish.

Ingredients

6 (6-ounce) skinless, boneless chicken breasts

1/4 cup olive oil

3 tablespoons Dijon mustard

3 tablespoons honey

2 tablespoons soy sauce

2 tablespoons lemon juice

3 cloves garlic, finely minced

1 1/2 teaspoons onion powder

1/2 teaspoon ground ginger

Oil or cooking spray

2 teaspoons kosher salt

Instructions

  1. In a medium bowl, whisk together olive oil, Dijon mustard, honey, soy sauce, lemon juice, garlic, onion powder, and ground ginger until well combined.
  2. Place chicken breasts in a large resealable bag or shallow dish. Pour marinade over chicken, turning to coat. Refrigerate at least 30 minutes, preferably 2–4 hours.
  3. Preheat grill to medium-high heat (about 400°F/200°C). Lightly oil grill grates or spray with cooking spray.
  4. Remove chicken from marinade and pat lightly with paper towels to remove excess liquid. Discard remaining marinade.
  5. Season chicken with kosher salt on both sides.
  6. Grill chicken 5–7 minutes per side, or until internal temperature reaches 165°F (74°C).
  7. Transfer to a plate, cover loosely with foil, and let rest 5 minutes before serving.

Swap honey for maple syrup for a different sweetness.
