½ cup whole milk
4 cups frozen Tater Tots
1 cup sharp cheddar cheese, shredded
To serve:
Fresh pepper
Herbs
Preheat the oven to 375°F (190°C).
Cook the breakfast sausage in a skillet over medium heat until browned and fully cooked. Drain excess fat, season with salt and pepper.
Whisk together eggs, Monterrey Jack cheese, whole milk, salt, and pepper in a large mixing bowl.
In a greased 9×13-inch baking dish, spread frozen tater tots in an even layer at the bottom.
Layer cooked sausage evenly over the tater tots.
Pour the egg mixture over the tater tots and sausage.
Top with shredded sharp cheddar cheese and bake for 40-45 minutes, or until eggs are set and cheese is golden and bubbly.
Let cool slightly, then garnish with fresh pepper and herbs before serving.
Feel free to swap the breakfast sausage for turkey sausage, plant-based sausage, or skip it for a veggie option.
For extra flavor, add sautéed vegetables like bell peppers or spinach.
Freeze leftovers for up to 2 months by wrapping tightly in plastic wrap and foil.
