These Sweet Blueberry Biscuits are a perfect balance of light, fluffy biscuit texture and a burst of sweetness from fresh or dried blueberries. Topped with a simple, sweet glaze, these biscuits make an excellent choice for breakfast, brunch, or a sweet snack. Easy to prepare with minimal ingredients, they’re ideal for any occasion, offering a soft, melt-in-your-mouth experience in every bite.
For the biscuits:
2 cups flour
1 cup cold milk
⅓ cup sugar
5 tablespoons cold or frozen butter
4 teaspoons baking powder
1 teaspoon salt
3 ounces blueberries (fresh or dried)
For the glaze:
1 cup powdered sugar
⅛ cup water
1 teaspoon vanilla extract
½ teaspoon lemon juice
Preheat your oven to 450°F (230°C) and prepare a baking sheet by lining it with parchment paper or lightly greasing it.
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
Cut cold butter into small cubes and add them to the dry ingredients. Use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse crumbs.
Slowly pour in cold milk and stir gently until a dough forms. Avoid overworking the dough.
Carefully fold in the blueberries.
Transfer the dough to a floured surface and knead a few times. Shape the dough into a thick rectangle (about 1-inch thick).
Use a round biscuit cutter or glass to cut out biscuits, placing them on the prepared baking sheet.
Bake for 12-15 minutes until golden brown on top.
While biscuits bake, prepare the glaze by whisking powdered sugar, water, vanilla extract, and lemon juice in a small bowl.
Let biscuits cool for a few minutes, then drizzle with the glaze.
Serve warm and enjoy!
Make sure not to overwork the dough to keep biscuits soft and fluffy.
For a thicker glaze, reduce water or add more powdered sugar.
Frozen blueberries can be used, but fold them in gently to prevent the dough from turning blue.
These biscuits are versatile—add orange zest, cinnamon, or swap in other berries like raspberries or strawberries for different variations.
