These homemade Sugar-Free Marshmallows are a light, fluffy, and guilt-free treat perfect for those on a low-carb, keto, or sugar-free diet. Made with just a few ingredients—xylitol, gelatin, and water—these marshmallows are easy to prepare and offer a delicious alternative to sugary store-bought treats. Whether you enjoy them as a snack, in hot cocoa, or dipped in chocolate, they provide a sweet indulgence without the sugar.

Ingredients

100 grams xylitol (sugar sweetener)

4 gelatine sheets

3 tablespoons water

Instructions

  • Prepare the Gelatin: Soak the gelatine sheets in cold water for 5-10 minutes until soft and pliable.

  • Dissolve the Xylitol: In a small saucepan, combine xylitol and 3 tablespoons of water. Heat over low heat, stirring until dissolved.

  • Add the Gelatin: Remove the saucepan from heat and stir in the softened gelatine sheets until fully dissolved.

  • Whisk the Mixture: Pour the mixture into a large bowl or stand mixer. Cool for a few minutes before whisking at high speed until thick and fluffy, like marshmallow fluff (about 5-10 minutes).

  • Set the Marshmallows: Transfer the mixture to a lined baking dish or mold. Smooth the top and leave to set at room temperature for several hours, or overnight, until firm.

  • Cut and Serve: Remove from the mold, cut into squares, and optionally dust with xylitol powder to prevent sticking. Enjoy!

Notes

Storage: Store in an airtight container at room temperature for up to 1 week. Refrigerating may affect their chewy texture.

Freezing: These marshmallows freeze well for up to 1 month. Freeze in a single layer before transferring to a freezer bag.

Sweetener Substitutes: Erythritol or monk fruit sweeteners can be used instead of xylitol, but check the sweetness levels of your substitute.

Vegan Version: Use agar-agar instead of gelatine to make the marshmallows vegan-friendly.
