An easy yet elegant appetizer featuring sweet medjool dates stuffed with tangy goat cheese, topped with crunchy pistachios, and optionally finished with honey, sea salt, or pepper.

Ingredients

2224 medjool dates

½ cup goat cheese, room temperature

¼ cup chopped pistachios

Optional: honey, flaky sea salt, black pepper

Instructions

  1. Slice each date lengthwise on one side and remove the pit, keeping the date intact.
  2. Using a small spoon or piping bag, fill each date with about 1 teaspoon of goat cheese.
  3. Sprinkle chopped pistachios over the goat cheese filling, pressing gently so they stick.
  4. If desired, drizzle with honey, sprinkle with flaky sea salt, and finish with a crack of black pepper.
  5. Arrange on a serving platter and serve immediately, or refrigerate until ready to serve.

Notes

Swap goat cheese for blue cheese, cream cheese, or mascarpone for a different flavor profile.

Use toasted almonds, walnuts, or pecans instead of pistachios.

Add thyme or rosemary for an herbal touch.
