These Strawberry Chocolate Chip Oreos are a delicious twist on a classic treat! Soft, strawberry-flavored cookies filled with creamy cream cheese frosting and loaded with semi-sweet chocolate chips make for a perfect dessert. Fun, easy to make, and irresistibly tasty—ideal for any occasion!
For the cookies:
1 (16.5-oz) strawberry cake mix
2 eggs
1/3 cup vegetable oil
1 cup semi-sweet chocolate chips
For the cream cheese frosting:
1/2 cup butter, softened
1 (8-oz) package cream cheese, softened
3 3/4 cups powdered sugar
1 teaspoon vanilla extract
Optional: Sprinkles for rolling
Prepare the dough: Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the strawberry cake mix, eggs, and vegetable oil. Stir everything together until well combined into a thick dough.
Add the chocolate chips: Fold the semi-sweet chocolate chips into the dough until evenly distributed.
Shape the cookies: Roll the dough into small balls, about 1 inch in diameter. Place the dough balls on a baking sheet lined with parchment paper, spacing them about 2 inches apart. Flatten each dough ball slightly with your fingers or the bottom of a glass to form a cookie shape.
Bake the cookies: Bake the cookies in the preheated oven for 8–10 minutes, or until the edges are slightly golden. Allow them to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Make the cream cheese frosting: While the cookies are cooling, prepare the frosting. In a medium bowl, beat the softened butter and cream cheese together until smooth and creamy. Gradually add the powdered sugar, 1 cup at a time, beating well after each addition. Stir in the vanilla extract and beat until the frosting is light and fluffy.
Assemble the cookies: Once the cookies are completely cool, spread a generous amount of cream cheese frosting on the flat side of one cookie. Top with another cookie to form a sandwich. If desired, roll the edges of the cookie sandwich in sprinkles for an extra festive touch.
Serve: Enjoy these delicious strawberry chocolate chip Oreo cookies right away, or store them in an airtight container for up to 3 days.
Flavor variations: Experiment with different cake mixes like chocolate or vanilla for a different flavor base. Add crushed strawberries or strawberry puree for a fruity twist.
Filling variations: Try vanilla buttercream, chocolate ganache, or peanut butter frosting for a fun twist.
