Strawberry Cheesecake Banana Pudding is a creamy, no-bake dessert combining the rich flavors of cheesecake with the sweetness of strawberries and bananas. Layered with vanilla wafer cookies and a velvety pudding filling, it’s the perfect crowd-pleasing treat for any occasion.
For the Pudding:
1 box instant vanilla pudding mix
2 cups cold milk
1 can sweetened condensed milk
8 oz cream cheese, softened
1 cup heavy whipping cream
1 tsp vanilla extract
For the Layers:
1 lb strawberries, sliced
3–4 bananas, sliced
1 box vanilla wafer cookies, crushed (or graham cracker crumbs)
For Topping:
1 cup strawberry puree
1 cup whipped topping
Prepare the pudding: In a large bowl, whisk together the instant vanilla pudding mix, cold milk, and sweetened condensed milk. Whisk until the pudding thickens, about 2 minutes. Set aside to firm up while preparing the other layers.
Make the cheesecake filling: Beat the softened cream cheese in a separate bowl with an electric mixer until smooth. Add the heavy whipping cream and vanilla extract, continuing to beat until fluffy and fully combined.
Combine the pudding and cheesecake filling: Add the prepared pudding mixture to the cream cheese mixture, blending until smooth to create a creamy cheesecake-like filling.
Assemble the pudding layers: In a trifle dish or serving bowl, layer crushed vanilla wafer cookies (or graham cracker crumbs) at the bottom. Top with sliced bananas and strawberries.
Layer the filling: Spoon a generous layer of the cheesecake-pudding mixture over the fruit and cookies. Repeat layers until ingredients are used up, finishing with a layer of cheesecake-pudding mixture on top.
Top with strawberry puree and whipped topping: Drizzle strawberry puree over the top layer. Finish with whipped topping, spreading it evenly.
Chill and serve: Refrigerate the dessert for at least 4 hours, or overnight, for the best flavor and consistency.
Garnish and serve: Garnish with additional fresh sliced strawberries, banana slices, or crushed cookies before serving.
Storage: Store leftovers in an airtight container in the refrigerator for 3-4 days. The flavors improve as it sits.
