Protein-packed, low-carb Starbucks-inspired Egg White Bites featuring creamy cottage cheese, feta, Monterey Jack, and fresh veggies. These fluffy, cheesy bites are freezer-friendly, easy to make, and perfect for busy mornings.

Ingredients

1 (16 oz) carton egg whites (454 g)

½ cup whole milk cottage cheese (113 g)

½ cup crumbled feta cheese (65 g)

½ cup Monterey Jack cheese (45 g)

¼ cup roasted red pepper, minced (65 g)

¼ cup chopped spinach, finely chopped (15 g)

2 tablespoons green onion, minced (7 g)

½ teaspoon fine sea salt

½ teaspoon coarse ground pepper

23 drops hot sauce or pinch cayenne pepper

Nonstick cooking spray

4 cups hot water (for water bath)

Instructions

  1. Preheat oven to 325°F (165°C).

  2. Lightly spray a 6-cup silicone or metal muffin tin with nonstick spray.

  3. Blend egg whites, cottage cheese, feta, Monterey Jack, red pepper, spinach, green onion, salt, pepper, and hot sauce/cayenne until smooth.

  4. Pour mixture evenly into muffin cups, filling ¾ full.

  5. Place muffin tin inside a larger baking dish; pour hot water halfway up sides to create water bath.

  6. Bake 25-30 minutes until set and slightly golden.

  7. Remove muffin tin from water bath; cool a few minutes before removing bites.

Notes

Substitute spinach with kale or Swiss chard.

Use goat cheese, cheddar, or mozzarella instead of feta or Monterey Jack.

Add herbs like basil, parsley, or chives.

Increase cayenne or add jalapeños for extra spice.
