A fresh, colorful spinach salad with crisp greens, juicy apples and pears, crunchy nuts, and creamy cheese, topped with a tangy-sweet homemade honey vinaigrette. Perfect for everyday meals or special occasions.

Ingredients

810 cups baby spinach or other greens

1 apple, cored and finely chopped

1 pear, cored and finely chopped

1/2 cup candied pecans or walnuts (or other nuts)

1/4 lb crumbled feta, goat cheese, or blue cheese

4 tablespoons olive oil

3 tablespoons apple cider vinegar

2 tablespoons honey

1/2 teaspoon dry mustard

1 garlic clove, pressed

1/4 teaspoon salt

Instructions

  1. In a large salad bowl, combine spinach, apple, pear, nuts, and cheese.
  2. In a small jar or bowl, whisk together olive oil, apple cider vinegar, honey, mustard, garlic, and salt until well combined.
  3. Pour the dressing over the salad just before serving and toss gently to combine.
  4. Serve immediately.

Notes

Use mixed greens instead of spinach for variety.

Swap apples and pears for berries, oranges, or dried cranberries.

Try pecans, walnuts, almonds, or sunflower seeds for different crunch.

Replace feta with shaved Parmesan or fresh mozzarella.
