A fresh, colorful spinach salad with crisp greens, juicy apples and pears, crunchy nuts, and creamy cheese, topped with a tangy-sweet homemade honey vinaigrette. Perfect for everyday meals or special occasions.
8–10 cups baby spinach or other greens
1 apple, cored and finely chopped
1 pear, cored and finely chopped
1/2 cup candied pecans or walnuts (or other nuts)
1/4 lb crumbled feta, goat cheese, or blue cheese
4 tablespoons olive oil
3 tablespoons apple cider vinegar
2 tablespoons honey
1/2 teaspoon dry mustard
1 garlic clove, pressed
1/4 teaspoon salt
Use mixed greens instead of spinach for variety.
Swap apples and pears for berries, oranges, or dried cranberries.
Try pecans, walnuts, almonds, or sunflower seeds for different crunch.
Replace feta with shaved Parmesan or fresh mozzarella.
Add grilled chicken or salmon to make it a complete meal.
Store salad and dressing separately; salad lasts up to 2 days and dressing up to 1 week in the fridge.
