Ingredients

1 tablespoon olive oil

½ teaspoon table salt (or ¼ teaspoon if sensitive)

½ teaspoon chipotle powder (swap with chili powder for milder flavor)

½ teaspoon chili powder

½ teaspoon smoked paprika

½ teaspoon cumin

½ teaspoon garlic powder

1 to 1 ¼ pounds chicken tenderloins (or chicken breast cut into strips)

Juice of ½ lime (optional)

Instructions

  • Preheat oven to 400°F (200°C). Line or grease a baking sheet.

  • Mix salt, chipotle powder, chili powder, smoked paprika, cumin, and garlic powder in a bowl.

  • Pat chicken dry, drizzle with olive oil, and rub to coat evenly.

  • Sprinkle spice rub over chicken, coating all sides.

  • Arrange chicken on baking sheet in a single layer. Bake 15–20 minutes until internal temp reaches 165°F.
