Southern Chicken and Dumplings is a classic, comforting dish featuring tender chicken simmered in a flavorful broth with soft, fluffy dumplings. This hearty Southern staple offers rich homemade flavors and a satisfying texture, perfect for cozy family meals.

Ingredients

1 (3 to 4-pound) whole young chicken

3 ribs celery, cut into 3 large pieces each

1 large onion, peeled and quartered

1 tablespoon chicken base (e.g., Better Than Bouillon) or 3 chicken bouillon cubes

2 teaspoons salt

1 teaspoon black pepper

2 cups all-purpose flour

3/4 cup ice water

1 (10.5-ounce) can cream of chicken soup

3 tablespoons cornstarch (optional)

Instructions

  1. Place chicken, celery, onion, chicken base, salt, and pepper in a large pot. Cover with about 8 cups of water; bring to a boil. Reduce to simmer and cook 1 to 1.5 hours until chicken is tender.

  2. Remove chicken, set aside to cool. Strain broth and return to pot.

  3. Prepare dumplings by mixing flour and ice water into a soft dough; mix gently without overworking.

  4. Shred cooled chicken, discarding skin and bones.

  5. Stir cream of chicken soup into broth. For thicker broth, mix cornstarch with water and stir in. Bring to gentle boil.

  6. Drop spoonfuls of dumpling dough into boiling broth. Cover and cook 15-20 minutes without lifting lid, until dumplings are cooked and fluffy.

  7. Add shredded chicken back to pot and warm through. Adjust salt and pepper to taste.

  8. Serve hot.
