Slow Cooker Mississippi Pot Roast is a hands-off comfort food classic featuring tender chuck roast cooked low and slow with pepperoncini peppers, ranch seasoning, au jus gravy mix, and butter. This flavorful pot roast is juicy, easy to make, and perfect for family dinners or meal prep.

Ingredients

34 pounds chuck pot roast

8 ounces pepperoncini peppers with juices

1 packet Ranch seasoning blend

1 packet au jus gravy mix

1 stick (½ cup) butter

Instructions

  • Place the chuck roast in the slow cooker.

  • Sprinkle Ranch seasoning and au jus gravy mix evenly over the roast.

  • Pour pepperoncini peppers and their juices on top.

  • Place the stick of butter on the roast.

  • Cover and cook on low for 7–8 hours or on high for 4–5 hours until beef is tender.

  • Shred beef with two forks and mix with the juices before serving.

Notes

Add vegetables like potatoes, carrots, or onions for a complete meal.

Increase pepperoncini or add cayenne for extra heat.

For Instant Pot, cook on high pressure 60–70 minutes with natural release.

To thicken gravy, remove beef and simmer juices uncovered.
