These Skinny Berry Cheesecake Bars are a light and refreshing dessert, featuring a creamy lemon-flavored filling, a crunchy almond crust, and vibrant fresh berries on top. Ingredients

Almond Crust:

2 cups ground almonds

2 tablespoons butter or margarine

4 packets Splenda sugar or sugar alternative (or ¼ cup brown sugar if not diabetic)

Lemon Cream Cheese Filling:

12 oz light cream cheese

½ cup fat-free natural yogurt

1 tablespoon lemon zest

2 tablespoons fresh lemon juice

12 packets Splenda or sugar alternative of choice (or ½ cup of sugar if not diabetic)

Berry/Fruit Toppings:

2 cups fresh strawberries (sliced in half)

1 cup fresh blueberries

Instructions

  1. For the Almond Crust: Preheat oven to 350°F (175°C). Grease an 8×8-inch baking pan. In a bowl, combine ground almonds, melted butter, and Splenda or brown sugar. Press the mixture into the pan and bake for 8-10 minutes until lightly golden. Set aside to cool.

  2. For the Lemon Cream Cheese Filling: Beat cream cheese, yogurt, lemon zest, and lemon juice until smooth. Add Splenda and mix until fully incorporated. Pour over the cooled crust and smooth the top. Refrigerate for 2-3 hours until firm.

  3. For the Berry Toppings: Once the cheesecake bars are set, top them with strawberries and blueberries. Slice into squares and serve chilled.

Notes

These bars are best served cold. They can be made ahead and stored in the refrigerator for up to 4 days.

You can substitute the ground almonds with crushed graham crackers for a different crust.

For a dairy-free version, use dairy-free cream cheese and yogurt.
