Simple Breakfast Tostadas are a quick and delicious morning meal featuring crispy corn tortillas topped with warm refried beans, melted sharp cheddar cheese, eggs cooked to your liking, and fresh pico de gallo. Ingredients

Tortillas and Base

  • 2 cups refried beans, warmed

Cheese and Eggs

  • ½ cup grated sharp cheddar cheese
  • 8 eggs, fried or scrambled (your preference)

Instructions

  1. Prepare the Tortillas: Heat a large skillet over medium heat and add the extra-virgin olive oil. Once hot, place one corn tortilla in the skillet and cook until it becomes golden brown and crispy, about 2-3 minutes per side. Repeat with remaining tortillas, adding more oil if necessary. Set crispy tortillas aside on paper towels to drain excess oil.
  2. Warm the Refried Beans: While toasting the tortillas, warm the refried beans in a small saucepan over low heat, stirring occasionally until heated through. You can also warm them in the microwave if preferred.
  3. Cook the Eggs: Prepare the eggs to your liking—fried or scrambled. For fried eggs, heat a non-stick skillet with a little oil or butter over medium heat and cook eggs until whites are set but yolks remain runny or firm, based on preference. For scrambled, whisk eggs and cook in skillet over medium heat, stirring until softly set.
  4. Assemble the Tostadas: Spread a generous layer of warm refried beans onto each crispy tortilla. Sprinkle grated sharp cheddar cheese over the beans so it begins to melt slightly from the bean’s warmth.
  5. Add Eggs and Pico de Gallo: Place one cooked egg on top of each tostada. Spoon fresh pico de gallo over the eggs for a burst of flavor and freshness.
  6. Garnish and Serve: Add optional garnishes such as avocado slices, crumbled Cotija or feta cheese, and your favorite hot sauce or salsa. Serve immediately to enjoy the full texture contrast and flavor profiles.
