Ingredients

1 lb. asparagus (preferably thick stalks)

3 cups arugula

2 cups sliced strawberries

2 cups cooked quinoa (cooled)

¼ cup shaved parmesan

Orange Vinaigrette:

¼ cup freshly squeezed orange juice

¼ cup extra-virgin olive oil

1 teaspoon minced garlic

¼ teaspoon salt

¼ teaspoon pepper

Instructions

  • Prepare the Asparagus: Wash and trim the asparagus. Snap off the tough ends and shave the asparagus lengthwise into thin ribbons using a vegetable peeler or mandoline.
