Ingredients

1 cup all-purpose flour

1 tablespoon granulated sugar

½ teaspoon baking soda

½ teaspoon salt

¼ teaspoon baking powder

1 large egg

1 cup buttermilk

1214 sausage links (e.g., Johnsonville Original Recipe Breakfast Sausage Links)

Butter and maple syrup (for serving)

2 cups vegetable oil (for frying)

1214 apple skewers

Instructions

  1. Prepare the Sausages: Cook the sausage links according to the package instructions. Grill, pan-fry, or bake them until fully cooked and browned. Let them cool slightly before inserting the skewers.

  2. Prepare the Pancake Batter: In a mixing bowl, whisk together the flour, sugar, baking soda, salt, and baking powder. In a separate bowl, whisk the egg and buttermilk, then add them to the dry ingredients. Stir until the batter is smooth.

  3. Prepare the Skewers: Insert apple skewers into each sausage link, ensuring the skewer goes through the center, leaving enough for easy handling.

  4. Heat the Oil: In a pot or deep frying pan, heat the vegetable oil to 350°F (175°C). Test by dropping a bit of batter into the oil—it should sizzle and rise to the top.

  5. Coat the Sausages: Dip each sausage-on-a-stick into the pancake batter, ensuring it’s fully coated. Let excess batter drip off before frying.

  6. Fry the Sausage Pancakes: Lower each skewered sausage into the hot oil. Fry for 2-3 minutes per side, or until golden and crispy. Work in batches if needed to maintain oil temperature.

  7. Drain and Serve: Remove from oil and drain on paper towels. Serve hot with maple syrup and butter.

Notes

Spicy Sausage: Use spicy sausage links for an added flavor kick.

Fruit Addition: Incorporate mashed bananas or blueberries into the batter for a fruity twist.

Mini Sausage Sticks: Use mini or cocktail sausages for a bite-sized version of this dish. Adjust frying time accordingly.

Gluten-Free Option: Substitute the all-purpose flour with a gluten-free flour blend.
