Ingredients

12 pounds ground sausage

1.5 teaspoons butter

3 cups whole milk

3 tablespoons flour

Salt and pepper, to taste

6 cooked biscuits

Instructions

  1. In a large skillet over medium heat, cook sausage, breaking it up until browned and cooked through. Drain excess fat, leaving 1–2 tablespoons in skillet.

  2. Add butter; melt. Sprinkle flour over sausage and fat, stirring constantly for 2 minutes to form a roux.

  3. Gradually whisk in milk, stirring to prevent lumps. Cook over medium heat, stirring frequently, until gravy thickens (5–7 minutes).

  4. Season with salt and pepper. Adjust thickness with more milk if needed.

  5. Warm biscuits.

  6. Spoon hot gravy over biscuits and serve immediately.
