Ingredients

Pie Dough

  • 1 recipe pâte sucrée (sweet pie dough)

Filling

  • 8 tablespoons unsalted butter, melted
  • 1 cup grade B maple syrup, at room temperature
  • 3/4 cup packed light brown sugar
  • 1/4 cup fine ground yellow cornmeal
  • 1/4 heaping teaspoon kosher salt
  • 3 large eggs, at room temperature
  • 1 egg yolk, at room temperature
  • 3/4 cup heavy cream, at room temperature
  • 1½ teaspoons pure vanilla extract

Toppings & Finishing

  • Egg wash, for pie crust
  • Flaky salt, for serving

For Serving

  • Homemade whipped cream
  • Homemade vanilla ice cream

Instructions

  1. Prepare the pie dough: Roll out the pâte sucrée dough and fit it into a 9-inch pie dish. Crimp edges as desired and chill the dough while preparing the filling to prevent shrinking during baking.
  2. Make the filling: In a mixing bowl, whisk together the melted butter, grade B maple syrup, light brown sugar, fine ground yellow cornmeal, and kosher salt until fully combined. Add in the eggs, egg yolk, heavy cream, and pure vanilla extract, whisking until the mixture is smooth and uniform.
  3. Assemble the pie: Pour the filling into the chilled pie crust. Brush the edges of the crust with egg wash to promote a golden finish.
  4. Bake the pie: Preheat the oven to 350°F (175°C). Place the pie on the middle rack and bake for approximately 50 to 60 minutes, or until the filling is set but still slightly jiggly in the center. The crust should be golden brown.
  5. Cool and finish: Remove the pie from the oven and let it cool completely on a wire rack. Once cooled, sprinkle flaky salt over the top to enhance the salted maple flavor.
  6. Serve: Serve slices of the pie with homemade whipped cream or vanilla ice cream for a perfect dessert experience.

Notes

  • Grade B maple syrup is preferred for a deeper, more robust maple flavor.
  • Using room temperature ingredients ensures a smooth custard filling.
  • The cornmeal adds texture and helps to thicken the filling.
  • Letting the pie cool completely before slicing helps the filling set properly.
  • Flaky salt enhances the sweet and salty contrast of the pie.
  • Homemade whipped cream or vanilla ice cream elevates the serving experience but can be substituted with store-bought options.
