These Rutabaga Fries are a healthy, low-carb alternative to regular potato fries. Crispy on the outside and tender on the inside, they’re a perfect snack or side dish for anyone following a keto or low-carb diet. Easy to make and customizable with various seasonings and dipping sauces!

Ingredients

1 rutabaga

2 tablespoons extra virgin olive oil (EVOO)

Salt & pepper to taste

2 teaspoons dry paprika

Instructions

  • Preheat oven to 425°F (220°C).

  • Peel rutabaga and cut it into thin fries (about ¼ inch thick).

  • Toss fries in olive oil, salt, pepper, and paprika until evenly coated.

  • Spread fries in a single layer on a parchment-lined baking sheet.

  • Roast for 25–30 minutes, flipping halfway, until golden and crispy.

  • Serve with your favorite dipping sauce.
