Ingredients

1 small loaf of crusty whole grain bread, sliced into 1/2-inch slices

1 pound seedless red grapes

3 tablespoons olive oil, plus more if needed

1/4+ pound wedge of brie, sliced

12 sprigs fresh thyme

Salt, to taste

Freshly ground black pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss grapes with olive oil, salt, and pepper. Spread evenly and roast 15–20 minutes, until caramelized and juicy. Set aside.
  3. Lightly brush bread slices with olive oil and toast in the oven for 5–7 minutes until golden.
  4. Top each toasted slice with a piece of brie, then roasted grapes. Sprinkle with thyme leaves.
  5. Arrange on a platter and serve immediately while warm.
