Roasted fairytale eggplant is a simple, elegant side dish highlighting the naturally sweet, tender flavor of this petite variety. With olive oil, soy sauce, sesame seeds, and scallions, it’s light, healthy, and full of flavor.

Ingredients

1 fairytale eggplant, washed, tops cut, halved

12 tablespoons olive oil

1 teaspoon low sodium soy sauce

⅛ teaspoon kosher salt, or to taste

1 tablespoon sesame seeds

2 green onions (scallions), sliced

Drizzle of sesame oil, optional

Instructions

  1. Preheat oven to 400°F.
  2. Slice the eggplant in half lengthwise and place on a baking sheet.
  3. Drizzle with olive oil and soy sauce, sprinkle with kosher salt, and toss or brush to coat evenly.
  4. Roast 20–25 minutes until tender and golden brown.
  5. Remove from oven and sprinkle with sesame seeds and sliced scallions.
  6. Drizzle with sesame oil if desired before serving.

Notes

Add minced garlic or ginger before roasting for extra flavor.

Top with chili flakes or sriracha for a spicy version.

Swap soy sauce for tamari or coconut aminos for gluten-free.

Use white miso paste mixed with olive oil for deeper umami flavor.

Serve over rice or noodles for a more substantial side dish.

Store leftovers in the fridge for up to 3 days and reheat in oven or skillet.
