Beat the summer heat with this refreshing and healthy muskmelon drink. Packed with the cooling benefits of muskmelon, sabja, sabudana, and a creamy custard base, this drink is a perfect thirst-quencher. Enjoy a nutritious and delicious beverage to stay hydrated all summer long!

Ingredients

1 liter milk

2 tablespoons custard powder

¼ cup milk (for custard)

¼ cup sugar

¼ teaspoon cardamom powder

1 medium-sized muskmelon

4 tablespoons sugar (for muskmelon)

1 tablespoon sabja/sweet basil seeds

1 cup water (to soak sabja)

½ cup fine sabudana/sago

5 cups water (to boil sabudana/sago)

2 tablespoons pistachios

2 tablespoons almonds

Instructions

Prepare Sabja and Sabudana:

  1. Soak the sabja seeds in 1 cup of water for 30 minutes, until they swell.

  2. Soak the sabudana in 5 cups of water and boil for 10 minutes until they become transparent. Drain and set aside.

Prepare Custard:

  1. In a small bowl, mix ¼ cup milk with custard powder to form a smooth paste.

  2. In a saucepan, bring the remaining milk to a boil, then add the custard paste and sugar. Stir continuously until it thickens into a custard-like consistency. Remove from heat and let it cool.

Blend Muskmelon:

  1. Peel and chop the muskmelon into pieces. Blend it with 4 tablespoons of sugar to form a smooth puree.

Assemble the Drink:

  1. In a large pitcher, combine muskmelon puree, cooled custard, soaked sabja, and boiled sabudana. Add cardamom powder and mix well. Adjust sweetness with more sugar, if desired.

Chill:

  1. Refrigerate the drink for 1-2 hours to chill, allowing the flavors to meld.

Garnish and Serve:

  1. Before serving, add chopped pistachios and almonds. Serve chilled.

Notes

You can substitute muskmelon with watermelon, mango, or pineapple for different flavors.

For a vegan version, use almond milk or coconut milk instead of dairy milk.

Adjust sugar levels based on your sweetness preference. You can also use honey or stevia as natural sweeteners.
