For the Red Velvet Brownie Batter:
½ cup unsalted butter, melted
1 cup granulated sugar
2 large eggs
2 tsp vanilla extract
1 tbsp red food coloring
⅓ cup unsweetened cocoa powder
¾ cup all-purpose flour
¼ tsp salt
For the Cream Cheese Filling:
8 oz (225g) cream cheese, softened
¼ cup granulated sugar
1 large egg
½ tsp vanilla extract
Preheat oven to 350°F (175°C). Grease or line an 8-inch square baking pan with parchment paper.
Whisk melted butter and sugar together. Add eggs, vanilla, and red food coloring; mix well. Sift cocoa, flour, and salt, then fold into wet ingredients until smooth.
Beat cream cheese until smooth. Add sugar, egg, and vanilla; beat until creamy.
Pour half the red velvet batter into pan, spread evenly. Spoon cream cheese filling over it. Drop remaining batter over filling and gently swirl with a knife for marbled effect.
Bake 30-35 minutes until toothpick inserted comes out with a few moist crumbs. Cool completely before slicing.
Add white chocolate chips to cream cheese filling for extra sweetness.
Use beet juice as natural red coloring alternative.
Sprinkle nuts or chocolate chips on top before baking.
Add cinnamon or espresso powder to brownie batter for depth.
