Ingredients

For the Doughnut Dough:

2 tablespoons active dry yeast

½ cup warm water (105-110°F)

1 teaspoon granulated sugar (for yeast)

2½ cups all-purpose flour

¼ cup granulated sugar

2 large eggs

2 tablespoons unsalted butter, room temperature

2 teaspoons salt

Canola oil for frying

For the Sweet Glaze:

1½ cups confectioner’s sugar

½ cup whipping cream

Rainbow sprinkles for decoration

For the Rainbow Pudding Filling:

2½ cups vanilla pudding (store-bought or homemade)

Rainbow food coloring (red, orange, yellow, green, blue, purple)

Instructions

  • Make the Doughnut Dough:

    • Activate the yeast by dissolving it in warm water with sugar. Let sit until foamy (5-10 minutes).

    • In a large bowl, combine flour, sugar, eggs, butter, and salt. Add the yeast mixture and knead until smooth (5-7 minutes). Let dough rise in a greased bowl, covered, for 1-1.5 hours.

  • Fry the Doughnuts:

    • Punch down the dough and roll it out to ½ inch thickness. Cut into doughnut shapes.

    • Heat oil to 350°F (175°C) and fry doughnuts for 2-3 minutes per side until golden brown. Drain on paper towels.

  • Make the Rainbow Pudding Filling:

    • Divide pudding into 6 bowls and add food coloring to each for rainbow colors. Stir gently.

  • Assemble the Doughnuts:

    • Once doughnuts are cooled, use a small knife or piping bag to create a hole in each. Fill with rainbow-colored pudding.

  • Make the Sweet Glaze:

    • Whisk together confectioner’s sugar and whipping cream until smooth.

  • Glaze the Doughnuts:

    • Dip doughnut tops into the glaze, then place on a cooling rack to set. Top with rainbow sprinkles.
