A creamy and refreshing fruit salad made with pineapple, mandarin oranges, berries, and bananas coated in a smooth vanilla pudding dressing. Perfect as a dessert or sweet side dish for gatherings.

Ingredients

2 cans (20 oz each) pineapple chunks, drained (reserve the juice)

1 can (11 oz) mandarin oranges, drained

2 bananas, sliced (add just before serving)

1 1/2 cups blueberries

1 cup strawberries

1 cup chopped pecans (optional)

1 box (3.4 oz) instant vanilla pudding mix

1 cup reserved pineapple juice

Instructions

  1. In a medium mixing bowl, whisk the instant vanilla pudding mix with 1 cup of reserved pineapple juice until smooth and slightly thickened.
  2. In a large bowl, combine pineapple chunks, mandarin oranges, blueberries, and strawberries.
  3. Pour the pudding mixture over the fruit and gently fold until evenly coated.
  4. Cover and refrigerate for at least 1 hour before serving to let the flavors blend.
  5. Just before serving, fold in banana slices and pecans if using.

Notes

Swap vanilla pudding for cheesecake, banana cream, or coconut pudding for variety.

Add shredded coconut or mini marshmallows for extra texture.

Use grapes, raspberries, or kiwi as fruit substitutions.

Opt for sugar-free pudding for a lighter version.

Add bananas just before serving to prevent browning.
