Ingredients

1 ½ cups warm water (110°F)

2 ¼ teaspoons active dry yeast (not instant rise yeast)

2 teaspoons sugar

4 ½ cups unbleached all-purpose flour

2 teaspoons kosher salt

4 tablespoons unsalted butter, melted

¼ cup baking soda

1 egg, lightly beaten

Pretzel salt for sprinkling

8 ounces cream cheese, softened

1 cup sour cream

1 garlic clove, minced (or ¼ teaspoon garlic powder)

1 teaspoon Italian seasoning

4 green onions, green parts only, thinly sliced

1 cup shredded mozzarella cheese

Instructions

  1. Prepare the dough: In a large bowl, mix warm water, active dry yeast, and sugar. Let it sit for about 5 minutes until the mixture becomes frothy. Add the flour, salt, and melted butter. Stir until the dough begins to come together, then knead it on a floured surface for 8-10 minutes until smooth. Place the dough in a lightly oiled bowl, cover, and let it rise for 1 hour, or until doubled in size.
  2. Form the buns: Preheat the oven to 425°F. Punch down the dough and divide it into 12 equal pieces. Roll each piece into a smooth ball and place them on a parchment-lined baking sheet.
  3. Boil the buns: In a large pot, bring water to a boil and add the baking soda. Carefully lower each dough ball into the boiling water for about 30 seconds, then remove with a slotted spoon and return to the baking sheet.
  4. Bake the buns: Brush each bun with the beaten egg and sprinkle with pretzel salt. Bake for 15-20 minutes, or until golden brown.
  5. Prepare the creamy cheese dip: While the buns are baking, combine cream cheese, sour cream, garlic, Italian seasoning, green onions, and mozzarella in a medium bowl. Mix until smooth and well combined.
  6. Serve: Once the buns are baked and slightly cooled, serve them with the creamy cheese dip for dipping!

Notes

For a sharper flavor in the dip, substitute mozzarella with sharp cheddar cheese.

You can add dried herbs like rosemary or thyme to the dough for extra flavor.

For a healthier option, swap some of the all-purpose flour with whole wheat flour.
