Prawn Orzo with Sun-Dried Tomatoes is a creamy, flavorful dish featuring succulent prawns, tender orzo pasta, tangy sun-dried tomatoes, and creamy spinach. A perfect balance of textures and Mediterranean flavors, this easy-to-make recipe is ideal for a quick dinner or special weekend meal.
For the Prawns:
1 1/2 lb raw king prawns, peeled
1 tsp paprika powder
1/2 tsp red pepper flakes (optional)
2 tsp garlic powder
1 tsp black pepper
1 tsp salt
2 tbsp olive oil
6 cloves garlic, minced
For the Orzo Pasta:
1 tbsp olive oil
1/2 cup sun-dried tomatoes, chopped
1 cup uncooked orzo pasta
2 cups chicken broth
1 cup broccoli, finely chopped
2 cups fresh spinach
1 cup heavy cream
Salt and black pepper to taste
Prepare the Prawns:
In a bowl, combine paprika, red pepper flakes (if using), garlic powder, black pepper, and salt. Toss the prawns in the seasoning mixture to coat evenly.
In a large skillet, heat 2 tbsp olive oil over medium-high heat. Add the prawns and cook for 2-3 minutes on each side until they turn pink and are fully cooked through. Remove from the skillet and set aside.
Prepare the Orzo:
In the same skillet, add 1 tbsp olive oil and sauté the chopped sun-dried tomatoes over medium heat for 1-2 minutes until fragrant.
Add the uncooked orzo pasta to the skillet, stirring to coat it in the oil and tomatoes. Let it cook for about 1 minute.
Pour in the chicken broth, bring to a simmer, then cover and cook for about 10 minutes, stirring occasionally until the orzo is tender and the liquid is absorbed.
Add the chopped broccoli and cook for an additional 3-4 minutes until the broccoli is tender.
Add the Cream and Spinach:
Stir in the spinach and cook for another 1-2 minutes, allowing it to wilt.
Pour in the heavy cream and stir until everything is evenly combined. Season with salt and black pepper to taste, then let it simmer for another 2-3 minutes until creamy.
Combine the Prawns with the Orzo:
Return the cooked prawns to the skillet and gently toss them into the orzo mixture. Cook for an additional 1-2 minutes to heat the prawns through and allow the flavors to meld together.
Serve:
Remove from heat and serve the Prawn Orzo with Sun-Dried Tomatoes in individual bowls or plates. Enjoy this flavorful, creamy, and satisfying dish!
Vegetarian Option: Skip the prawns and substitute with tofu or additional vegetables such as roasted mushrooms or zucchini.
Spicy Kick: Increase the red pepper flakes or add a few dashes of hot sauce for extra heat.
Herb Variations: Add fresh basil, parsley, or thyme to the orzo for more flavor.
Lemon Zest: Add a touch of lemon zest just before serving for a refreshing twist.
