A savory and crunchy snack that combines the best of trail mix and pizza flavors, featuring a blend of nuts, pizza seasonings, and sun-dried tomatoes for a satisfying, portable treat.

Ingredients

1 cup raw cashews

½ cup raw almonds

¼ cup raw walnuts

2 teaspoons olive oil

1 tablespoon nutritional yeast

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon dried oregano

½ teaspoon dried thyme

½ teaspoon dried basil

½ teaspoon fine sea salt

⅓ cup dry-packed sun-dried tomatoes, cut into bite-size pieces

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the raw cashews, almonds, and walnuts.
  3. Drizzle the olive oil over the nuts and toss to coat evenly.
  4. Add the nutritional yeast, garlic powder, onion powder, oregano, thyme, basil, and sea salt to the nuts. Toss again to ensure all the nuts are evenly seasoned.
  5. Spread the seasoned nuts in a single layer on the prepared baking sheet.
  6. Bake for 10-12 minutes, stirring once or twice during baking to ensure even roasting. Keep an eye on them so they don’t burn.
  7. Remove the nuts from the oven and let them cool completely on the baking sheet.
  8. Once cooled, stir in the sun-dried tomatoes.
  9. Serve immediately or store in an airtight container for up to a week.

Notes

For extra cheesiness, you can add Parmesan or cheddar powder to the seasonings.

Feel free to swap nuts like pistachios or pecans for a personalized twist.

If using jarred sun-dried tomatoes, drain and chop them before adding them to the mix.

For a spicy version, add red pepper flakes or cayenne pepper to the seasoning mix.
