Pizza Toast is a quick and delicious way to enjoy pizza flavors with crispy sourdough bread, juicy tomatoes, mozzarella, and parmesan, topped with fresh basil and garlic.

Ingredients

2 beef tomatoes

250 ml passata

250 g (2 balls) mozzarella, cut into thin slices

50 g parmesan cheese

1 bunch fresh basil, removed from stem

4 large slices of sourdough bread

2 cloves of garlic

Cupboard Essentials:

1 tbsp extra virgin olive oil

Salt & pepper

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Slice the tomatoes and set them aside.
  3. Cut the mozzarella into thin slices and prepare the parmesan cheese.
  4. Slice the sourdough bread into 4 large slices, then rub each slice with a cut garlic clove for a hint of garlic flavor.
  5. Place the sourdough slices on a baking tray and drizzle each slice with olive oil.
  6. Spread a thin layer of passata on each slice of sourdough.
  7. Layer the sliced mozzarella over the passata and top with a few slices of beef tomato.
  8. Sprinkle the grated parmesan over the tomatoes and mozzarella.
  9. Season with salt and pepper to taste.
  10. Place the tray in the oven and bake for 10-12 minutes, or until the cheese is melted and golden brown.
  11. Remove from the oven and garnish with fresh basil leaves.
  12. Serve immediately and enjoy your delicious Pizza Toast!

Notes

For a spicy kick, add red pepper flakes or fresh chili slices.

Use gluten-free bread if you need a gluten-free version.

Try adding cooked bacon, pepperoni, or chicken for extra protein.

For a crispier crust, lightly toast the sourdough bread before adding toppings, or broil the toast for the last 1-2 minutes of cooking.

Store leftover pizza toast components separately in the fridge for up to 1 day and reheat when needed.
