Pesto Chicken Caprese combines the rich flavors of basil pesto, fresh mozzarella, and juicy tomatoes with tender chicken breasts for a dish that’s both simple and packed with vibrant taste. Perfect for a weeknight dinner or special occasion.

Ingredients

2 (10- to 12-ounce) skinless boneless chicken breasts

½ teaspoon salt

2 tablespoons olive oil

4 tablespoons basil pesto

1 large beefsteak tomato, cut into four ¼-inch thick slices

8 ounces fresh mozzarella cheese, cut into 8 slices

Fresh basil leaves, torn

Instructions

  1. Prepare the chicken: Preheat the oven to 375°F (190°C). Season the chicken breasts with salt on both sides.
  2. Cook the chicken: Heat olive oil in a skillet over medium heat. Add the chicken breasts and cook for about 6-7 minutes per side, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C). Remove from heat.
  3. Top with pesto: Once the chicken is cooked, spread 2 tablespoons of basil pesto on top of each chicken breast.
  4. Add the tomato and mozzarella: Place 2 slices of fresh mozzarella and 1 slice of tomato on top of each chicken breast. Return the skillet to the stove over low heat and cover for 2-3 minutes, just long enough for the mozzarella to melt slightly.
  5. Garnish and serve: Remove from heat and sprinkle with fresh torn basil leaves. Serve immediately.

Notes

If you prefer grilled chicken, you can grill the chicken breasts instead of pan-searing them for a smokier flavor.

For a tangy finish, drizzle balsamic glaze over the chicken before serving.

Feel free to experiment with different cheeses such as burrata or mild goat cheese for a unique twist.
