1 egg yolk

½ teaspoon lemon juice

½ teaspoon vanilla extract

Egg Wash:

1 large egg

1 ½ teaspoon water

Glaze Drizzle:

½ cup powdered sugar

1 ½ tablespoon lemon juice

½ teaspoon vanilla extract

Instructions

  • Prepare the Peach Filling: In a medium bowl, mix the peach pieces with sugar and cinnamon. Set aside.

  • Make the Cream Cheese Mixture: In a separate bowl, beat together cream cheese, sugar, egg yolk, lemon juice, and vanilla extract until smooth.

  • Prepare the Puff Pastry: Roll out the puff pastry and cut into squares or rectangles.

  • Assemble the Pastries: Place a small amount of cream cheese mixture on each pastry square, then top with a spoonful of peach filling. Fold the edges over and seal.

  • Apply the Egg Wash: Whisk together the egg and water. Brush the egg wash over the pastries.
