In a medium saucepan, combine the diced peaches, brown sugar, cinnamon, cornstarch, and vanilla extract. Cook over medium heat, stirring occasionally, for 5-7 minutes, or until the mixture thickens and the peaches soften. Remove from heat and let it cool for a few minutes.
