Peach Burrata Salad

A refreshing salad combining juicy peaches, heirloom tomatoes, creamy burrata, and crunchy pistachios, all drizzled with a tangy fresh herb vinaigrette. Perfect for a light summer meal or as an appetizer.

Ingredients

1/3 cup olive oil

1/4 cup balsamic vinegar

2 tablespoons raw honey

3 tablespoons fresh chopped basil

2 tablespoons fresh thyme

2 cloves minced garlic

1 teaspoon salt

34 ripe peaches, sliced

2 large heirloom tomatoes, sliced

1 pint cherry tomatoes, sliced in half

8 ounces fresh burrata

1/3 cup raw unsalted pistachios (or pine nuts)

Fresh basil, roughly chopped, plus more basil leaves for garnish

1 teaspoon kosher salt

23 sprigs fresh thyme leaves

Instructions

  1. In a small bowl or jar, combine olive oil, balsamic vinegar, honey, basil, thyme, garlic, and salt. Whisk or shake until emulsified.
  2. On a large platter or individual plates, arrange peach slices, heirloom tomato slices, and halved cherry tomatoes.
  3. Tear the burrata into large chunks and place on top of the salad.
  4. Sprinkle pistachios (or pine nuts), fresh basil, kosher salt, and fresh thyme leaves over the salad.
  5. Drizzle the herb vinaigrette over the salad just before serving.

Notes

For a vegan option, replace burrata with a vegan cheese alternative or omit the cheese.

Substitute pistachios with toasted almonds, pecans, or other nuts for different textures.

Add cucumber slices, avocado, or arugula for extra freshness.

Grill the peaches for a smoky flavor twist.
