Parmesan Roasted Potatoes are crispy on the outside, tender on the inside, and full of flavor. Coated in butter, Parmesan cheese, and savory herbs, they make the perfect side dish for any meal.

Ingredients

1 stick butter (1/2 cup)

1/3 cup grated Parmesan cheese

3 tablespoons herb seasoning, divided (any brand – I use Mrs. Dash)

1 teaspoon salt

1/2 teaspoon black pepper

2 lbs red potatoes, washed

Nonstick cooking spray

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or spray with nonstick cooking spray.
  2. Prepare the Potatoes: Wash the red potatoes and cut them into evenly sized cubes or wedges, keeping the skin on for extra flavor and texture.
  3. Melt the Butter: In a small saucepan, melt the butter over medium heat. Once melted, remove from heat and stir in the grated Parmesan cheese, 2 tablespoons of herb seasoning, salt, and pepper. Mix until well combined.
  4. Toss the Potatoes: Place the cut potatoes in a large bowl. Pour the melted butter mixture over the potatoes and toss to coat evenly, ensuring every piece is well-covered.
  5. Roast the Potatoes: Spread the coated potatoes in a single layer on the prepared baking sheet. Roast in the preheated oven for 30-35 minutes, or until golden brown and crispy. Stir halfway through for even cooking.
  6. Garnish and Serve: Once done, remove the potatoes from the oven and sprinkle with the remaining tablespoon of herb seasoning. Serve hot and enjoy!

Notes

Use Italian seasoning, garlic powder, or a homemade herb mix for different flavor variations.

Experiment with cheeses like Asiago, Romano, or mozzarella for a unique twist.

Add cayenne pepper or red pepper flakes to spice up the potatoes.

For a vegan version, swap the butter with olive oil and omit the Parmesan or use a plant-based cheese alternative.
