Overnight Breakfast Casserole

A wholesome make-ahead breakfast casserole made with bread, juicy berries, and a naturally sweetened custard, prepared the night before for a stress-free, delicious morning meal.

Ingredients

6 cups berries (32 oz)

1 lb thick bread

1 1/3 cup applesauce or mashed banana

2/3 cup milk of choice

2/3 cup egg whites or additional milk of choice

1/4 cup pure maple syrup, agave, or honey

1 tsp pure vanilla extract (optional)

Instructions

  1. Lightly grease a 9×13-inch baking dish.
  2. Cut bread into bite-sized cubes and place half in the bottom of the dish.
  3. Scatter half of the berries over the bread.
  4. Repeat with remaining bread and berries.
  5. In a medium bowl, whisk applesauce (or banana), milk, egg whites (or additional milk), maple syrup, and vanilla if using.
  6. Pour mixture evenly over bread and berries, pressing gently to help absorption.
  7. Cover and refrigerate overnight or at least 6 hours.
  8. Preheat oven to 350°F (175°C) in the morning and bake uncovered for 35–40 minutes, until golden and set.
  9. Cool slightly before serving.

Notes

Use a sturdy bread such as brioche, challah, or sourdough for best texture.

Frozen berries work well; do not thaw before using.

Add cinnamon, nutmeg, or chopped nuts for extra flavor and crunch.

Gluten-free bread can be used for a gluten-free version.
