Ingredients

½ lb sweet or spicy Italian sausage, casings removed

½ medium onion, diced

1 bell pepper, diced

8 oz mushrooms, sliced

4 oz tomato paste (about ⅓ cup)

½ teaspoon red pepper flakes (optional)

1 ½ teaspoons oregano

2 garlic cloves, minced

½ lb short pasta like rotini

2 ½ cups chicken broth

1 ½ cups shredded mozzarella cheese

Parmesan cheese for garnish (optional)

Instructions

  • Cook Italian sausage in a large pot or deep skillet over medium heat, breaking it up until browned, about 5-7 minutes.

  • Add onion, bell pepper, and mushrooms; sauté until softened, about 5 minutes.

  • Stir in tomato paste, red pepper flakes, oregano, and garlic; cook 1-2 minutes until fragrant.

  • Add chicken broth and uncooked pasta; stir to combine.

  • Bring to a boil, then reduce heat to medium-low and simmer uncovered, stirring occasionally for 12-15 minutes until pasta is tender and liquid is mostly absorbed.

  • Stir in mozzarella until melted and creamy.

  • Serve garnished with Parmesan if desired.
