1 cup rolled oats
½ cup natural peanut butter
¼ cup honey or maple syrup
¼ cup dark chocolate chips (optional for topping)
½ teaspoon vanilla extract (optional)
Pinch of salt (if using unsalted peanut butter)
In a medium bowl, combine the rolled oats, peanut butter, honey or maple syrup, and vanilla extract (if using). Mix well until all ingredients are evenly combined.
Taste the mixture and adjust the sweetness if needed by adding more honey or maple syrup, or a pinch of salt if using unsalted peanut butter.
If you’re adding chocolate chips, fold them into the mixture.
Roll the mixture into small bite-sized balls, about 1 tablespoon each.
Place the rolled bites on a parchment-lined baking sheet or tray.
Refrigerate for at least 30 minutes to allow the bites to firm up.
Once chilled, enjoy the bites immediately or store them in an airtight container.
Sweeteners: Feel free to substitute honey with agave syrup or maple syrup for a vegan-friendly option.
Texture Adjustments: If the mixture is too dry, add a little more peanut butter or honey/maple syrup until it holds together well.
Add-ins: Customize with chia seeds, flax seeds, or dried fruit like cranberries or raisins for added flavor and texture.
