Nectarine Clafoutis is a delightful French dessert with tender nectarines in a soft, custard-like batter. This light and comforting treat showcases the sweetness of ripe nectarines in a simple yet impressive dessert.

Ingredients

3 ripe nectarines, pitted and sliced

3 large eggs

½ cup granulated sugar

1 cup all-purpose flour

1 cup whole milk

1 tsp vanilla extract

4 tbsp unsalted butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9-inch pie dish or baking dish with butter or cooking spray.
  2. Slice the nectarines into thin wedges and arrange them evenly in the bottom of the prepared dish.
  3. In a medium mixing bowl, whisk together the eggs, sugar, flour, milk, and vanilla extract. Add the melted butter and whisk until smooth and well combined.
  4. Pour the batter over the nectarines, ensuring the fruit is evenly submerged.
  5. Bake for 35-40 minutes, or until golden brown on top and puffed up around the edges. A knife inserted in the center should come out clean.
  6. Let the clafoutis cool slightly before serving. Optionally, dust with powdered sugar or drizzle with honey for extra sweetness.
