Mini Pancake Cereal is a fun, bite-sized twist on the classic breakfast favorite. These tiny, fluffy pancakes are served with sweet toppings like white chocolate chips, fresh berries, and maple syrup for a playful and delicious breakfast.

Ingredients

1 cup whole milk

2 tbsp fresh lemon juice

1 ½ cups all-purpose flour

1 tbsp protein powder

1 ½ tsp baking powder

½ tsp baking soda

2 tbsp granulated white sugar

½ tsp salt

1 tsp vanilla extract

Canola oil for frying the pancakes

White chocolate chips

Blueberries

Strawberries

Maple syrup (optional)

Milk (optional)

Instructions

  1. Prepare the Buttermilk: In a small bowl, combine the whole milk and fresh lemon juice. Let sit for about 5 minutes to create a homemade buttermilk.
  2. Make the Batter: In a large bowl, whisk together the flour, protein powder, baking powder, baking soda, sugar, and salt. Add the vanilla extract to the buttermilk mixture, then pour into the dry ingredients. Stir until just combined, leaving the batter slightly lumpy.
  3. Cook the Pancakes: Heat a non-stick skillet or griddle over medium-low heat and lightly grease with canola oil. Using a small spoon or squeeze bottle, pour small dots of batter to form mini pancakes. Cook for 1-2 minutes per side, flipping when bubbles appear on the surface.
  4. Serve the Cereal: Once all pancakes are cooked, transfer them to a bowl. Top with white chocolate chips, blueberries, and sliced strawberries.
  5. Add Toppings: Drizzle with maple syrup or pour milk over the pancakes for a comforting, sweet cereal experience.
  6. Enjoy: Dig in and enjoy your delicious mini pancake cereal!

Notes

Experiment with different toppings like banana slices, nuts, or whipped cream for extra flavor.

For flavored syrups, try blueberry, strawberry, or chocolate syrup.

For a gluten-free version, swap out the all-purpose flour for a gluten-free blend.

To make it dairy-free, use almond or oat milk and plant-based protein powder.
