This Mexican Casserole is a flavorful, hearty dish filled with seasoned ground beef, creamy soup, beans, and a kick of heat from Ro-Tel tomatoes with green chilies. It’s the perfect one-dish meal for busy nights, combining all the comforting flavors of Mexican cuisine into a cheesy, satisfying casserole that’s easy to make and sure to please the whole family.

Ingredients

For the casserole:

1 lb lean ground beef

1 small onion, chopped

1 (10 oz) can Ro-Tel tomatoes (with green chilies)

1 (15 oz) can Ranch Style beans

1 packet taco seasoning

1 (10.5 oz) can cream of chicken soup

Instructions

  • Preheat the oven to 350°F (175°C).

  • In a large skillet, brown the ground beef over medium heat, breaking it apart as it cooks. Drain excess fat once cooked.

  • Add the chopped onion to the skillet and sauté for 3-4 minutes until softened.

  • Stir in the taco seasoning, Ro-Tel tomatoes with green chilies, Ranch Style beans, and cream of chicken soup. Mix until well combined and heated through.

  • Transfer the mixture into a greased 9×13-inch baking dish and spread it out evenly.

  • Bake uncovered for 20-25 minutes or until the casserole is bubbling and hot.

  • Remove from the oven and let it cool slightly before serving.

Notes

Add shredded cheese during the last 5 minutes of baking for extra cheesiness.

If you prefer a vegetarian version, substitute ground beef with sautéed mushrooms or vegetables.

To spice it up, add sliced jalapeños or chili powder.

You can layer in some cooked rice for a heartier dish.
