Meatballs and Potatoes is a comforting, satisfying dish that combines juicy meatballs with crispy roasted potatoes. It’s a hearty, flavorful meal perfect for busy weeknights or family gatherings.

Ingredients

For the Meatballs:

1 lb ground beef or turkey

1/4 cup breadcrumbs (or gluten-free breadcrumbs)

1/4 cup grated Parmesan cheese (optional)

1 egg

2 cloves garlic, minced

1 tsp onion powder

1 tsp Italian seasoning

Salt and pepper, to taste

For the Potatoes:

2 lbs baby potatoes or Yukon gold potatoes, quartered

2 tbsp olive oil

1 tsp garlic powder

1 tsp paprika

1 tsp dried parsley

Salt and pepper, to taste

Instructions

  1. Preheat the oven: Preheat your oven to 400°F (200°C).
  2. Make the Meatballs: In a large bowl, combine the ground beef (or turkey), breadcrumbs, Parmesan cheese (if using), egg, garlic, onion powder, Italian seasoning, salt, and pepper. Mix well until all ingredients are fully incorporated. Shape the meat mixture into meatballs, about 1 to 1 1/2 inches in diameter, and place them on a baking sheet lined with parchment paper or a silicone baking mat.
  3. Prepare the Potatoes: In another bowl, toss the quartered potatoes with olive oil, garlic powder, paprika, dried parsley, salt, and pepper until well-coated. Arrange the potatoes on the same baking sheet around the meatballs.
  4. Bake: Bake for 20-25 minutes, or until the meatballs are fully cooked through (internal temperature should reach 165°F or 74°C) and the potatoes are golden and crispy on the edges.
  5. Serve: Remove from the oven and let rest for a few minutes before serving.

Notes

You can substitute ground chicken for beef or turkey to change the flavor.

Sweet potatoes can be used for a different twist on the potatoes.

Add red pepper flakes to spice things up or some shredded cheese to the meatballs before baking for extra flavor.

For a vegetarian version, replace the meatballs with lentil or chickpea-based alternatives.
